Teff is a very tiny little grain -- but, packs quite the whollop when it comes to nutrition.  Whole grain teff is the smallest grain in the world (about 100 grains are the size of a kernel of wheat)!  Whole grain teff is an ancient East African cereal grass.  The germ & bran (where the nutrients are concentrated), account for a larger volume of the seed compared to other grains.

    Teff has a nutty flavor and lots of calcium, protein & fiber.  It makes a great hot cereal, stews, pilafs, or put into baked goods.
